The Mediterranean, Middle East and Eastern Europe traditionally undertake nistisima which translates as ‘Lenten’ or ‘fasting foods’. But this is not a religious or diet book, rather one that incorporates the philosophy of eating plant-based foods with delicious recipes.
A treasury of over 120 fragrant and spiced recipes that include a diverse range of breads, salads, pulses and grains, cake, biscuits and preserves to make. Some of my favourites include spiced snacking nuts and seeds (which can be balanced to your taste – sweet or spicy), Makdous, baby aubergines with walnuts and chilli and little za’atar buns (very easy to make). An essential pantry guide is invaluable – but unfortunately the list of stockists are UK based.
This is a book to savour, while reading about the rich history and stories of many different cultures.
