Becky Excell’s new cookbook opens the door to a whole new realm of gluten-free cooking using the humble air fryer.
I’ll admit I was sceptical of this book at first due to the slightly over-the-top colourful design of the cover and pages that, to me, implied the unserious nature of the contents or perhaps recipes designed for children. However, I was proven entirely incorrect as the 100+ recipes in this book are accessible, non-complex, flavoursome and adaptable for various intolerances and kitchen appliance limitations.
The spicy bean burgers were easy to make and turned out crispy and full of flavour even without garlic and onion as per Becky Excell’s low FODMAP diet. The desserts section featuring a gluten-free sponge baked in the air fryer is innovative and slightly revolutionary for us gluten intolerant folk who know how difficult it is to make a fluffy gluten free cake let alone a Victoria Sponge.
This book would be especially useful for families and parents with younger children, as there are many fun recipes including the dinosaur nuggets that kids would love. If you’re looking for easy and tasty meals that accommodate your dietary requirements and predominantly use what’s already in your pantry, I’d recommend you check out Becky Excell’s Gluten Free Air Fryer.
