The essence of Filipino cooking with its traditions and rich folklore is brought to life in this beautiful book, Under Coconut Skies: Feasts & stories from the Philippines.
Filipino food, Yasmin Newman says, is the culmination of salty, sour, sweet and funk bitter ingredients and the recipes she has included, will ‘bring you to life: cooling, warming, soothing and exciting’ your appetite and your senses. Combining classic dishes with regional fare, together with heirloom ingredients, it includes simple-to-follow (and adapt) recipes for snacks, salads, meats, fish and dessert dishes.
Some recipes you may want to try include: crab omelette with sour salad (a reimagined version of rellenong alimasag); braised pork shoulder with pickled shallot sawsawan; lumpiang hubad (Cabbage and Green Bean Slaw with chilli-peanut dressing); and mango trifle with rum syrup, cashew brittle and lime.
